NORMA was born from the desire to provide an authentic Italian trattoria experience in Brussels: simple and excellent cuisine made with local and Italian artisanal products in a welcoming setting. 

NORMA is strongly inspired by traditional Italian cuisine, whose greatest ambassadors are, of course, the Italian grandmothers -the nonne. Often found at work in the kitchens of Italy’s greatest trattorias, grandmothers are at the source of typical Italian recipes. NORMA’s cuisine is directly inspired by this culinary heritage, passed down from generation to generation, based on a familial kitchen hospitality and the love of sharing a good meal. Our cuisine combines simplicity and excellence with carefully-selected ingredients from small Belgian or Italian producers. 

Thanks to its unique terrasse & garden, NORMA is an authentic little Italian enclave in the city centre of Brussels.

Antipasti & Aperitivo : Enjoy a Spritz or glass of Prosecco and discover NORMA’s antipasti, a selection of Italian regional excellences, presented in small bites or dishes prefect to be shared
Pasta  : Great classics of the Italian tradition and lesser-known regional recipes, made with the best Italian products. The menu is short and constantly changes according to the seasonal fruit and vegetables.
Wines & Cocktails  : A constantly evolving wine list that allows you to explore the best winemakers of all Italian regions and a nice selection of revisited and Italian classic cocktails

Our Story

“We wanted to find the cuisine of the Italian region in Brussels and create a place where you feel at home; a warm Italian atmosphere, with simple, seasonal dishes”.

NORMA’s story begins in 2018 when its two Italian founders Giacomo and Massimiliano moved to Brussels after working a year in Copenhagen. They both greatly missed the long diners shared with friends and family in the trattorias back in Friuli. Not finding anything close to that convivial experience, they only had one choice: to open their own trattoria, a simple and welcoming restaurant, which honors their grandmothers’ cuisine. They named NORMA in honor of Giacomo’s grandmother, and to represent the beloved and inspired cooking of all Italian nonne. In 2020, they formed the Carbonara Society with a longtime friend and investor as the holding company for NORMA and other projects to come …

Sustainability

We are committed to a sustainable and environmentally-responsible lifestyle. Our restaurant is supported in this process by several entities including Bruxelles Environnement, Village finance, and Hub.brussels.

We make everything from scratch, from food to drinks. Our menu has ingredients scrupulously-selected not just for their taste but also for their sustainability: eggs, fresh cheese, fresh vegetables, and grains come from local producers in Brussels or Belgium. 

At NORMA, we mill our flour fresh daily for the preparation of  focaccia dough to keep the delicate flavor of the grains intact and to guarantee the lightness and better digestibility of the dough. 

We have eliminated the use of cans by making a wide choice of drinks from scratch, including our kombuchas (tea-based, naturally-fermented carbonated soft drinks), ginger beer (non-alcoholic ginger-based drink, naturally fermented ), our iced teas, and fresh-juiced fruit juices.

To reduce our environmental impact, we provide water from a filtered water fountain and serve it in glass bottles to reduce CO2 footprint.
